    Honey Mustard Breaded Chicken


    H is for Honey!

    Golden brown, crispy, and delicious, this Honey Mustard Breaded Chicken is an easy recipe that is perfect for a weeknight dinner everyone will love!


    This year I'm participating in a bi-weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.
     
    I had lots of great recipes to pick from for the letter H but in the end accidentally ordering 2 jars of honey on my pickup order sent me searching for a way to use it.  I was inspired by a recipe for Honey Mustard Breaded Chicken I found on the Taste of Home website.
     

    What do I need to make Honey Mustard Breaded Chicken?

    Honey (of course), Dijon mustard, butter, olive oil, seasoned panko breadcrumbs and thinly sliced chicken breasts.
     

     

    Breading the chicken

    Place 2 teaspoons of Dijon mustard and the panko crumbs into one cake pan or shallow dish. In another, place 1/4 cup of Dijon and 1/4 cup honey.  Mix together well.  Dip the chicken into the honey mixture and then into the crumbs, pressing them on so they adhere well.
     
     
    Heat olive oil and butter over medium heat. Cook the chicken 4 to 6 minutes per side or until golden brown and the juice runs clear.  Move them to a towel lined platter or a wire rack over a baking sheet to catch any excess butter/oil.

     
    If you don't want to pan fry you can bread them and then place onto a baking sheet coated with cooking spray.  Heat the oven to 400 degrees and bake for approximately 25 minutes or until the juice runs clear.

    Ingredients

    • 4 to 6 boneless skinless thinly sliced chicken breasts
    • 1 1/2 cups Italian seasoned panko crumbs
    • 2 teaspoons plus 1/4 cup Dijon mustard, divided
    • 1/4 cup honey
    • 4 Tablespoons butter
    • 1/4 cup olive oil

    Instructions

    1. In a shallow bowl, combine bread crumbs and 2 teaspoons of mustard. In another shallow bowl, combine honey and remaining mustard. Dip chicken in honey-mustard mixture, then coat with crumbs.
    2. In a nonstick skillet, cook chicken in two batches over medium heat in butter and olive oil for 4-6 minutes on each side or until chicken juices run clear. Move to a paper towel lined platter or a wire rack over a baking sheet to catch any excess butter/oil mixture.

    Baking instructions: Heat oven to 400 degrees. Coat a baking sheet with nonstick spray.  Place chicken on tray. Bake for approximately 25 minutes or until the juices run clear and the coating is crispy and golden brown.
