Baked key lime pie donuts are a delicious treat that blend the refreshing flavors of key lime pie with the soft, fluffy goodness of a donut.
What ingredients do I need to make Baked Key Lime Pie Donuts?
The dry: cake flour, baking soda, baking powder, salt. The wet: buttermilk, granulated sugar, an egg, Key lime juice, lime zest, vegetable oil. For the glaze: Key lime juice, lime zest, confectioners sugar, food coloring and graham crackers.
What's the easiest way to fill the donut pans with batter?
My preferred method is using a piping bag. I place the bag inside of a large cup and then fold it over the rim. That way I have one hand to hold the bowl and the other to use a spatula to scrape it in. Pull the bag out, twist the top and then cut the 1/2" off the bottom.
Even though my pans are nonstick I give them a quick spray anyway, especially the center area. Nothing worse than going to flip them onto the cooling rack and having them not turn out.
Glaze on a wire rack over a baking sheet for easy clean up!
I also recommend lining it with parchment paper, which I forgot to do this time as evidenced by the glorious mess. No worries though, it comes off with a quick scrape of a spatula.
Some of the glaze and toppings did manage to actually make it onto the donuts. I did a few with the Key lime glaze, lime zest and graham cracker crumbs.
Then I dyed the remaining glaze with green and yellow food coloring. Some of the donuts just got a drizzle, others got dipped. If you want a thinner glaze you can add a bit more of the Key lime juice and pour it over.
They were so fluffy I struggled to get in focus photos of the interior. I got exactly 12 but my guys thought they were a little skimpy so next time I'd fill each one up a bit more and probably get one less donut.

Baked Key Lime Pie Donuts

Ingredients
- 1 1/4 cups unbleached cake flour
- 3/4 teaspoon kosher salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup granulated sugar
- 2 tablespoons Key lime zest
- 1/4 cup whole buttermilk, room temperature
- 1 large egg, room temperature
- 3 tablespoons Key lime juice
- 3 tablespoons vegetable oil
Glaze:
- 1 1/2 cups confectioners sugar
- 2 Tablespoons Key lime juice
- Green and yellow liquid food coloring
Garnish:
- graham cracker crumbs, Key lime zest, if desired
Instructions
- Preheat oven to 400°F. Butter and flour 2 (6 count) donut pans.
- In a small bowl, whisk together flour, salt, baking powder, and baking soda.
- In a medium bowl, whisk together granulated sugar and lime zest until zest is evenly distributed. Add buttermilk, egg, 3 tablespoons Key lime juice, and oil. Whisk until combined.
- Add flour mixture, and whisk until just combined, stopping to scrape sides of bowl. Transfer batter to a pastry bag, and cut a ½-inch opening in tip. Pipe batter evenly into prepared wells (about 2 heaping tablespoons each).
- Bake until puffed and edges are golden, 8 to 10 minutes, rotating pans halfway through baking. Let cool in pans for 10 minutes. Invert onto a wire rack, and let cool completely.
- In a small bowl, whisk together confectioners’ sugar and remaining 2 tablespoons Key lime juice. Tint with food coloring as desired. Dip, drizzle or pour glaze over donuts.
- Garnish with graham cracker crumbs and lime zest, if desired. Store in an airtight container for up to 3 days.
