    Sloppy Joe Sliders

     

    Burnt out on tacos and beef stroganoff sandwiches so I went looking for some new ideas on my Pinterest boards.  It's been ages since we've had sloppy Joes so I added the ingredients for these sliders to my pickup list. 

     

    Start by browning ground beef and onion in a pan. Drain it well and then add sloppy Joe sauce, soy, brown sugar and freshly ground black pepper.  Cook and stir for a few minutes, until it's well incorporated.


    I love a pretzel bun and King's Hawaiian makes them in mini form. 2 packages contain 18 rolls total but my kid is picky so I held 3 aside for him to bake separately.  I cut each slice of cheese into 4 pieces and laid them on top of the rolls. I like a sharp cheddar but you can use what you like. 

    Spread the sloppy Joe mixture evenly over the cheese. Top with more squares of cheddar.  Pop it into the oven to bake for 5 to 8 minutes or until the cheese is melted.  

    The original recipe calls for a glaze and it all being baked together but the pretzel buns are already salted and I did not want them to burn.  After I melted the cheese, I put the tops on and then put them in the oven for around 2 minutes, just to warm them up. 


    You can definitely go heavier with the cheese if you like by just laying out the full slices and using more of them but I was happy with the ratio. 


    I topped mine with a couple of Kickin' Pickle slices than I get from a local farmstand. Adding jalapeno slices under or on top of the cheese before baking them would be delicious too.  I plan on making more batches of the sloppy Joe mixture and freezing them for future meals!

    Ingredients

    • 2 pkgs Kings Hawaiian Pretzel Slider Buns, 18 total
    • 9 slices cheddar cheese
    • 1-1/2 pounds lean ground beef (90% lean)
    • 1 Tablespoon minced dried onion
    • 1 can (15-1/2 ounces) sloppy Joe sauce
    • 1 Tablespoon packed brown sugar
    • 1 Tablespoon reduced-sodium soy sauce
    • 3/4 teaspoon freshly ground pepper

    Instructions

    1. Preheat oven to 350°. Without separating rolls, cut rolls in half horizontally; arrange bottom halves in a greased 13x9-in. baking pan. Top with half the cheese slices.
    2. In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, crumbling beef; drain. Stir in sloppy Joe sauce, brown sugar, soy sauce and pepper.
    3. Cook and stir until combined, 1-2 minutes. Spoon beef mixture evenly over rolls; top with the remaining cheese.
    4. Bake for an additional 5 to 8 minutes or until the cheese is melted. Replace top halves of rolls, bake for 2 more minutes.
