    Double Dark Chocolate Waffles


    D is for double dark chocolate!

    This year I'm participating in a bi-weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.


    I've always been partial to dark chocolate and since this post falls a few days before Valentine's Day I think these waffles from Bon Appetit are the perfect way to showcase it.  I call them double dark waffles because I used Hershey's Special Dark cocoa powder along with the dark chocolate.


    This is a pretty standard waffle, first you combine the flour, dark brown sugar, cocoa, salt, baking powder and baking soda in a large bowl.


    You make a well and then add in the egg yolks, buttermilk, olive oil and vanilla. My well sort of collapsed but it didn't really matter.  Beat up the ingredients in the middle with a fork and then slowly incorporate the flour mixture with them. 


    The egg whites get beaten to soft peaks and I did this using my hand mixer.  You want to gently fold them into the chocolate mixture in two additions, being careful not to knock all the air out of them. 

     

    Next up, the dark chocolate.  Don't skimp on this ingredient, buy a name brand.  If you don't want to chop the bars you can also get the chips and use those instead. 

     

    I used my square waffle maker for these and an extra-large cookie scoop to portion out the batter.  Bake them according to your iron's instructions, being careful not to overcook them.


    You can serve them with butter and maple syrup (the real stuff, please!) and they'd be great for breakfast or brunch.  Or you can go all in and embrace them as a dessert and top them with whipped cream, ice cream, chocolate sauce, cherries or sprinkles. 


    Separating the eggs makes them almost cake-like but they are not super sweet.  You can keep them warm in a 250º oven on a baking sheet, or you can freeze them solid, vacuum seal them and reheat them in the toaster.

    Ingredients

    • 2 cups all-purpose flour
    • ½ cup unsweetened Hershey’s Special Dark cocoa powder
    • ¼ cup (packed) dark brown sugar
    • 2 teaspoons baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon kosher salt
    • 3 large eggs, separated
    • 2 cups buttermilk
    • ½ cup olive oil
    • 1 teaspoon vanilla extract
    • 6 oz. bittersweet chocolate, finely chopped
    • Nonstick vegetable oil spray
    • Butter and warm pure maple syrup, or whipped cream, ice cream, sprinkles, optional

    Instructions

    1. Whisk flour, cocoa powder, brown sugar, baking powder, baking soda, and salt in a large bowl. Make a well in the center and add egg yolks, buttermilk, oil, and vanilla. Blend with a fork, then gradually incorporate dry ingredients, mixing just until combined.
    2. Using an electric mixer on medium-high speed, beat egg whites in a small bowl until soft peaks form. Working in 2 batches, fold egg whites into batter just until combined. Fold in chocolate.
    3. Heat a waffle iron until very hot; lightly coat with nonstick spray. Working in batches, cook waffles until cooked through. Serve waffles with butter and syrup, or top with whipped cream, ice cream and sprinkles, if desired.

    6. We LOVE chocolate waffles, I have a favorite sourdough recipe with malt and cocoa and chocolate. So good warm or cold, with whipped cream!
