Whole Wheat Waffles


W is for Whole Wheat Waffles!

This year I'm participating in a bi-weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.

I cannot believe how fast this year is gone and that we are up to W already! This one was an easy choice for me because I love waffles. I've not always had great luck with whole wheat recipes, but this one came from the King Arthur Baking Company website so I figured it was a good bet.

While you make the batter, preheat your waffle iron.  Combine together whole wheat flour, baking powder, salt and sugar in a large bowl. 

In another bowl, whisk together milk, one egg and melted butter.  I deviated from the recipe a bit and added some pure vanilla extract at this point as well. 

You don't want to go nuts getting out every single lump. Small ones are okay.  Overworking the batter leads to dense waffles.  

Give the iron a coating a non-stick spray and then I use a large cookie scoop to make sure my waffles are all even.  This recipe will make three thick Belgian style round waffles.  I put my oven on about 170 degrees and keep the already baked waffles warm on a baking sheet while I finish up the rest.

We like a variety of different toppings here.  Sometimes it's butter and real maple syrup, other times fresh fruit and whipped cream. Occasionally it's even ice cream and caramel syrup or hot fudge topping. 

I was pleased with how these turned out. They were a great texture and held up well to a generous amount of syrup being poured into the pockets without disintegrating.

Whole Wheat Waffles

Whole Wheat Waffles

Ingredients

  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon table salt
  • 2 tablespoons (granulated sugar
  • 1 large egg
  • 1 1/2 cups whole milk, lukewarm
  • 5 tablespoons butter, melted or 1/3 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • Toppings: butter, real maple syrup, fruit, whipped cream

Instructions

  1. Preheat your iron while you make the waffle batter.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In a separate bowl or large measuring cup, whisk together the egg, milk, butter or oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients, stirring just until combined. It's okay if the batter is a bit lumpy.
  5. Cook the waffles per the manufacture's directions for your iron. Serve warm as desired with butter, syrup, fruit, whipped cream.

Whole wheat waffles are the best! Despite the butter and syrup, I always feel like I'm eating a healthy breakfast.
They look wonderful! I haven't broken out the waffle maker in a while...

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper.   Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed. They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time! Stuffed Waffles

I wasn't sure I was going to blog these stuffed waffles since it was the first time I tried using the new iron but since I'd already taken the pics as I went I figured, why not? They aren't perfect but they are delicious! I'd seen videos floating around TikTok and Instagram of people making stuffed waffles so I hopped over to Amazon and ordered the Elite Gourmet version.  The instructions were fairly straightforward but there was no recipe so I made up a batch of Classic Waffle batter. Then I scoured the fridge for things to stuff them with.    First up, some leftover taco meat from the previous night and Fiesta blend cheese,  pepperoni and mozzarella cheese and lastly some strawberries and cream cheese.   For the taco stuffed I added the taco meat and cheese in the middle and then set out some salsa and sour cream to top them with.  Learning curve lesson 1- make sure your ingredients are all room temp before you start, they will bake much quicker.  For the pepperoni pi
