Who else is ready for fall? I'm so excited for hoodies and cider and nights around the fire pit. This week I'm getting together with some amazing bloggers to share recipes featuring the season's best flavors!
I'm kicking things off with Apple Cider Biscuits. They've got a few more ingredients than your standard biscuit recipe, but I promise, they're not super hard to make.
You can totally do the "cut in the butter with knives" thing but I am terrible at that so I use a food processor. Add your flour, baking powder, sugar, salt and cubed cold butter. Just be sure to pulse, not go full tilt with it.
Once it resembles coarse crumbs, add in your cider. No, apple juice is not the same. Even if you don't have an orchard nearby your local grocery store most likely will carry cider in the fall months.
Dump the dough out onto a pastry mat or lightly floured surface. It's going to look ragged, it's okay. Knead it 7 times or so to bring it together and then pat it into a disk. Gently roll it out to 1/2" thickness.
Using a biscuit cutter or small glass, cut out rounds by pushing straight down and coming straight up. Twisting the cutter will stop the biscuits from rising as high as they should. Place them onto the baking tray and then sprinkle the tops with cinnamon.
Do yourself a favor, while the biscuits are baking, whip together 1 stick softened butter, 1/4 cup honey and 1/2 teaspoon cinnamon. I used a hand mixer and then moved it to my little serving dish.
This isn't just good on biscuits, it's great on waffles, croissants, toast, pancakes and even green beans or carrots.
Carefully split the cooled biscuits and slather them with the butter. The cinnamon on top gives it a nice color, I might even do a cinnamon/sugar mix next time.
These would make a nice base for breakfast sandwiches with some scrambled egg and bacon. They'd also make a nice "shortcake" with some sauteed apples and whipped cream.

Apple Cider Biscuits
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons sugar
- 1/2 teaspoon salt
- 1/3 cup cold butter
- 3/4 cup apple cider
- 1/8 teaspoon ground cinnamon
Instructions
- In a bowl, combine the flour, baking powder, sugar and salt. Cut in butter until mixture resembles coarse crumbs.
- Stir in cider just until moistened. Turn onto a lightly floured surface and knead 8-10 times.
- Roll out to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on ungreased baking sheets. Sprinkle with cinnamon; pierce tops of biscuits with a fork.
- Bake at 425° until golden brown, 12-14 minutes

ReplyDeleteI didn't get a chance to read your post or recipe earlier. I wanted to let you know what was going on before I left for a hike with my daughter. I am home now, facebook is restored (kinda) and your biscuits look great. I love the idea of using cider for the liquid. YUM

ReplyDeleteI can't wait for fall weather! We usually have a couple more heatwaves before then but at least it cools at night. These biscuits (and that butter) will definitely bring the feeling of fall while we're waiting!
