Apple Cider Biscuits

Who else is ready for fall? I'm so excited for hoodies and cider and nights around the fire pit. This week I'm getting together with some amazing bloggers to share recipes featuring the season's best flavors!

I'm kicking things off with Apple Cider Biscuits. They've got a few more ingredients than your standard biscuit recipe, but I promise, they're not super hard to make. 

You can totally do the "cut in the butter with knives" thing but I am terrible at that so I use a food processor.  Add your flour, baking powder, sugar, salt and cubed cold butter. Just be sure to pulse, not go full tilt with it.

Once it resembles coarse crumbs, add in your cider. No, apple juice is not the same. Even if you don't have an orchard nearby your local grocery store most likely will carry cider in the fall months. 

Dump the dough out onto a pastry mat or lightly floured surface. It's going to look ragged, it's okay.  Knead it 7 times or so to bring it together and then pat it into a disk.  Gently roll it out to 1/2" thickness. 

Using a biscuit cutter or small glass, cut out rounds by pushing straight down and coming straight up.  Twisting the cutter will stop the biscuits from rising as high as they should. Place them onto the baking tray and then sprinkle the tops with cinnamon.

Do yourself a favor, while the biscuits are baking, whip together 1 stick softened butter, 1/4 cup honey and 1/2 teaspoon cinnamon. I used a hand mixer and then moved it to my little serving dish.

This isn't just good on biscuits, it's great on waffles, croissants, toast, pancakes and even green beans or carrots.

Carefully split the cooled biscuits and slather them with the butter. The cinnamon on top gives it a nice color, I might even do a cinnamon/sugar mix next time.

These would make a nice base for breakfast sandwiches with some scrambled egg and bacon.  They'd also make a nice "shortcake" with some sauteed apples and whipped cream.

Apple Cider Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1/3 cup cold butter
  • 3/4 cup apple cider
  • 1/8 teaspoon ground cinnamon

Instructions

  1. In a bowl, combine the flour, baking powder, sugar and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Stir in cider just until moistened. Turn onto a lightly floured surface and knead 8-10 times.
  3. Roll out to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on ungreased baking sheets. Sprinkle with cinnamon; pierce tops of biscuits with a fork.
  4. Bake at 425° until golden brown, 12-14 minutes

    I didn't get a chance to read your post or recipe earlier. I wanted to let you know what was going on before I left for a hike with my daughter. I am home now, facebook is restored (kinda) and your biscuits look great. I love the idea of using cider for the liquid. YUM

    I can't wait for fall weather! We usually have a couple more heatwaves before then but at least it cools at night. These biscuits (and that butter) will definitely bring the feeling of fall while we're waiting!

    What not to love in these biscuits? The apple cider in the dough and on top of that, a honey butter to schmear....I am loving these biscuits!!

    Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

    I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper.   Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed. They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three.     Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

    Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time!     Stuffed Waffles

    I wasn't sure I was going to blog these stuffed waffles since it was the first time I tried using the new iron but since I'd already taken the pics as I went I figured, why not? They aren't perfect but they are delicious! I'd seen videos floating around TikTok and Instagram of people making stuffed waffles so I hopped over to Amazon and ordered the Elite Gourmet version.  The instructions were fairly straightforward but there was no recipe so I made up a batch of Classic Waffle batter. Then I scoured the fridge for things to stuff them with.    First up, some leftover taco meat from the previous night and Fiesta blend cheese,  pepperoni and mozzarella cheese and lastly some strawberries and cream cheese.   For the taco stuffed I added the taco meat and cheese in the middle and then set out some salsa and sour cream to top them with.  Learning curve lesson 1- make sure your ingredients are all room temp before you start, they will bake much quicker.  For the pepperoni pi
