    S'mores Brownies


     It has been such a hot summer that we've barely gotten any use out of our fire pit. My son has been despondent over the lack of s'mores so when I chose my recipes for this year's Summer Dessert Week I had to make sure I included some form of them.

     

    These s'mores brownies start by making a graham cracker layer with crumbs, butter, sugar and cinnamon. Press it into a 13x9 baking pan and bake for about 8 minutes. Set it aside to cool.

     

    The brownie layer mimics the chocolate bar portion of the treat. I've done from scratch brownies a few times and this version is pretty easy. I wasn't sure about folding in the marshmallows but went with it anyway.

    On top of the brownie layer you crumble up some graham crackers and then sprinkle on more marshmallows.  I didn't measure. I just added until it looked like each brownie would have a nice amount of topping.

    I was a bit disappointed at the lack of color on the marshmallows when they came out of the oven so I hit them with the kitchen torch. To me it's not really a s'mores dessert until the marshmallow is toasted.

    Normally I'd scoff at a recipe saying you can get 2 dozen servings out of a 13x9 but I agree on this one. These are absolutely decadent and you don't need a huge piece to feel satisfied.

    Ingredients

    Graham Crust
    • 1-1/2 cups graham cracker crumbs (about 10 whole crackers)
    • 1/4 cup sugar
    • 1 teaspoon ground cinnamon
    • 1/2 cup butter, melted
    Brownies
    • 1 ounce unsweetened baking chocolate
    • 1/2 cup butter, softened
    • 1-1/4 cups sugar
    • 3 large eggs, room temperature
    • 1 teaspoon vanilla extract
    • 1-1/4 cups all-purpose flour
    • 1/3 cup dark baking cocoa
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 cup miniature marshmallows
    Topping
    • 1 cup miniature marshmallows
    • 5 whole graham crackers, broken into bite-sized pieces

    Instructions

    1. Preheat oven to 350°. Combine cracker crumbs, sugar and cinnamon. Stir in melted butter. Press onto the bottom of an ungreased 13x9-in. baking pan. Bake until lightly browned, 7-9 minutes. Cool on a wire rack.
    2. For brownies, melt unsweetened chocolate on high in a microwave, stirring every 30 seconds. Cool slightly. Cream butter and sugar on medium speed until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition; beat in melted chocolate and vanilla. In another bowl, whisk together flour, cocoa, baking powder and salt; stir into creamed mixture. Fold in 1 cup miniature marshmallows.
    3. Spread batter over graham cracker crust. Top with 1 cup marshmallows and broken graham crackers. Bake until center is set, 18-22 minutes (do not over bake).

    7. The double whammy of graham crackers on the bottom and top sounds so good. And all that chocolate goodness with marshmallows on top. Yum!
