Lemon Vinaigrette

L is for Lemon !

This year I'm participating in a bi weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet.  It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.

Since K was such a troublemaker for me I decided to go super simple for L and make Lemon Vinaigrette.  Grilled chicken and salad is a go-to as summer heats up because I'm all about easy meals but I still want them to taste good.

 

You can make this vinaigrette with five ingredients, lemon juice, Dijon mustard, olive oil, salt and pepper. I originally made it in a glass measuring cup but then switched it to a small jar that I recycled from some pesto because I wanted to be able to put a lid on it and store it.

 

I used my teeny little mini whisk as I added in the oil. I'm guessing you could probably just put the lid on the jar and shake it, which is what I did when I used it a few hours later.

 

It's good as is, but I decided to add a few more things to it. My chives are going crazy right now so I'm putting them in/on just about everything and also some crushed red pepper flakes. 

And since I'd zested the lemons I tossed that in there as well so it wouldn't go to waste.

I served it over some mixed greens, mini cucumbers, sliced red onion and grape tomatoes, but there are so many other options for this than salad.

You can toss it with pasta, use it as a marinade for chicken or shrimp, drizzle it over veggies like green beans, use it for a mayo-free potato salad.

Lemon Vinaigrette

Lemon Vinaigrette
Yield: 1/2 cup

Ingredients

  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon coarsely ground pepper
  • 6 tablespoons extra virgin olive oil
  • Chives, crushed red pepper flakes, lemon zest (optional)

Instructions

  1. In a large bowl, whisk together first 4 ingredients. Slowly add olive oil while whisking constantly. Add optional ingredients if desired, whisk again.

A perfect summer dressing. It would also make a great marinade for grilled chicken breasts.

We always have a jar of vinaigrette in the fridge that I top up and add extra ingredients to as we use it. I'll be adding crushed red pepper next, thanks to you, Jolene!

That sounds so good with your extras in there. I love having fresh chives in my garden.
Love simple vinaigrettes like this, they are the best! And my chives are going crazy too, what a great idea.

A good basic homemade lemon vinaigrette elevates the flavour of any salad. Adding chives is a great idea.

Copycat Dunkin Donuts Egg White & Veggie Omelet Bites

I'm a huge fan of the Dunkin Donuts Power Breakfast sandwich, so when I started seeing ads for the new Egg White & Veggie Omelet Bites I stopped in and gave them a try.  They were delicious, but of course, I knew I could make them at home.  I started with the whites of six eggs. You can use pasturized whites if you don't want to do the whole separating, finding a use for the yolks thing.  I beat them up with some salt and pepper.   Next up, the tomato and spinach.  I used grape tomatoes, seeded them and then chopped them into 1/4" pieces. I like baby spinach, and I took about 10 leaves and chopped those up into 1/4" pieces as well. I added that to the egg mixture.  When you pour it into the pans, be sure that it all gets evenly distributed. They bake up pretty quickly, around 9 minutes or so.  Dunkin gives you two egg bites, the mini donut serving size is three. Copycat Dunkin Donuts Bacon and Cheddar Omelet Bites

Since I already came up with a version of Dunkin Donuts new Egg White & Veggie Omelet Bites for myself, I decided to make the other variety that they are offering, Bacon & Cheddar, for my husband. Super simple.  Beat up some eggs with salt and pepper.  Add in some shredded cheddar and a slice of bacon cut into 1/4" pieces (I used kitchen shears).  Bake them for about 9 minutes in sprayed mini donut pans. They baked up light and fluffy.  The bacon stayed crisp and there's just the perfect amount of cheese.   I split them up into portions in zip top bags and that way we can just grab a bag and warm them up. My husband laughed when I told him 3 is the serving size.  I'll definitely be doubling the recipe next time! Stuffed Waffles

I wasn't sure I was going to blog these stuffed waffles since it was the first time I tried using the new iron but since I'd already taken the pics as I went I figured, why not? They aren't perfect but they are delicious! I'd seen videos floating around TikTok and Instagram of people making stuffed waffles so I hopped over to Amazon and ordered the Elite Gourmet version.  The instructions were fairly straightforward but there was no recipe so I made up a batch of Classic Waffle batter.
