K is for Key Lime!
This year I'm participating in a bi weekly challenge with some blogging friends to post recipes using all of the letters in the alphabet. It can feature a food that begins with the letter of the week or the recipe name can contain the week's letter.
I'm going to be honest, K has been a bit of a PITA for me. I started out making Key Lime Pie Bars which were delicious but did not photograph well. Then I made Kahlua popsicles and they did not set and we ate them with a spoon. So here I am, back for another try at K again.
I got this recipe from the Nellie & Joe's website. It starts with a "simple syrup" of sorts with part Key lime juice and part sugar. You cook it until the sugar is dissolved and then let it cool.
Then you rim the glasses with graham cracker crumbs. You can dip the rims in water but I dipped mine into the Key Lime syrup and then into the crumbs.
For the cocktail you add 2oz of the syrup, 4oz of vodka and a couple drops of vanilla to a shaker with some ice. Shake for 1 minute or until well combined and the outside of the shaker has condensation on it.
Pour into the prepared glass and enjoy. It's a great combo of sweet and tart. Some may think a bit too tart, so you could definitely do a 1:1 ratio of Key lime juice to sugar for the syrup.

Key Lime Pie Cocktail
Ingredients
- 2 cups Nellie & Joe’s Key West Lime Juice
- 1½ cups of sugar
- Graham cracker crumbs
- 2 oz. Key lime syrup
- 2 drops vanilla extract
- 4 oz. vodka
Instructions
- For the syrup: Combine juice and sugar in a medium saucepan and cook until sugar is completely dissolved.
- Place graham cracker crumbs on a dish or small bowl. Dip rim of glasses into the syrup and then into the crumbs. Set aside.
- In an ice-filled cocktail shaker add 2oz Key lime syrup, 4oz vodka and a couple drops of vanilla extract. Shake until well combined, about 1 minute.
- Pour into prepared glasses and enjoy.

ReplyDeleteI just love those glasses, they are so pretty. And as for the drink, am glad the Key Lime Pie Cocktail turned out perfect. It's a unique recipe for me. And now I know what to ask from my US relatives... Key Lime Juice :)
