#NationalPancakeDay is celebrated on the Tuesday before Lent begins each year. It's also known as Shrove Tuesday or Pancake Tuesday. Here are our favorite ways to celebrate!
Raspberry Ricotta Pancakes
These pancakes have a fluffy, tender texture and a slight tang from the ricotta, making them a delicious twist on traditional pancakes. The raspberries give them a beautiful pop of color.

Yogurt Pancakes
This recipe is like a choose your own adventure! I've yet to make a batch with a yogurt flavor that didn't turn out awesome.
Chocolate Lover's Pancakes
You could argue that these pancakes are more suitable for dessert than breakfast. The base recipe isn't super sweet so you can top them with ice cream or whipped cream or vanilla yogurt and berries.
Brown Sugar Oatmeal Pancakes
This is another great make ahead recipe, they freeze and reheat amazingly well. Very easily customizable with fruit or other mix ins.

This is a classic recipe that can easily be adapted any way you like, berries, bananas, chocolate chips, but they're great with just some real maple syrup.

I love the sweet/tart thing going on with these pancakes. I've made them with regular oranges and blood oranges and they are fantastic both ways!
