I just love any excuse to break out the donut pans and as soon
as I saw the festive and colorful sprinkles that Sweets and Treats sent I
knew immediately that I wanted to do a "funfetti" style donut. The sprinkles I used are called Basket Case, a naturally colored pastel mix.
I used Taylor and Colledge Lemon Extract Paste in the batter. One teaspoon of it is the same as using the zest from a whole lemon! I love the paste because you use far less than traditional liquid extract.
For the glaze I mixed together Dixie Crystals powdered sugar with Taylor & Colledge Vanilla Bean Paste, along with some milk. Everyone in my house likes varying layers of glaze, so some got a heavy dip while others got lighter ones.
If you are adding additional sprinkles on top of the glaze you want to dip a few, put the sprinkles on and repeat so that the glaze doesn't set up on you and the sprinkles just roll off.
It's like eating sunshine in donut form. Bright beautiful lemon flavor in the donut itself, the classic vanilla bean glaze, and of course, loads of delicious sprinkles!

Lemon Funfetti Baked Donuts
Ingredients
- 2 cups all purpose flour
- 3/4 cup Dixie Crystals granulated Sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon butter, melted
- 2 large eggs, beaten
- 3/4 cup milk
- 1 teaspoon Taylor & Colledge Lemon Extract Paste
- 1/4c Sweets & Treats Sprinkle Mix- I used Basket Case
- Yellow food coloring, if desired
- 1 ½ cups Dixie Crystals powdered sugar
- 2-3 tablespoons milk
- 1 teaspoon Taylor & Colledge Vanilla Bean Paste
- Additional sprinkles for decoration.
Instructions
- Preheat oven to 325.
- Combine flour, sugar, baking powder and salt. Add butter, milk, eggs, and lemon extract paste and food coloring, if desired. Beat until blended. Spoon batter into a pastry or ziptop bag.
- Coat donut pan with nonstick spray. Fill each 2/3 full.
- Bake 14 to 16 minutes for full size donuts, 8 to 10 minutes for mini donuts. Cool in pans 3 to 5 minutes, then cool completely on wire racks.
- Combine powdered sugar, milk and vanilla bean paste. Carefully invert donuts into glaze, then return to upright position and set onto cooling rack. Top with sprinkles, if desired.
