    BLT Waffle Sliders

     

     
    We are big fans of waffles so I jumped at the chance to join some of my fellow blogger friends to celebrate #NationalWaffleDay today!  Since I've made a ton of sweet waffles, I went searching for a savory option and found Stacey J's BLT Waffle Sliders on the Taste of Home site. 

     

    I'm going to be honest, the recipe calls for separating the eggs and beating them to stiff peaks and I did not.  I know that this may result in a slightly more dense waffle, but since it's for a sandwich I'm totally okay with that.  

     

    I used a cookie scoop to make sure they were all the same size. I split the batch evenly and did half of them as slider size and half as full size waffles.  I think those would be great topped with chili, so I'm going to freeze some of them for when the weather is cooler.

     

    This would make a great brunch item because you can lay everything out and people can assemble their own based on their likes and dislikes. My guys don't do veggies, so they'd just pile theirs with bacon and top with some maple syrup.

    BLT Waffle Sliders

    Ingredients

    • 3/4 cup all-purpose flour
    • 3/4 cup cornmeal
    • 3 teaspoons baking powder
    • 1 tablespoon sugar
    • 1 teaspoon salt
    • 2 large eggs, separated
    • 1 cup milk
    • 3 tablespoons butter, melted
    • 1/2 cup shredded cheddar cheese
    • 6 tablespoons mayonnaise or ranch dressing
    • 12 bacon strips, cooked and drained
    • 2 small tomatoes, sliced
    • 6 lettuce leaves
    • Salt and pepper to taste

    Instructions

    1. Preheat waffle maker. Whisk together first five ingredients. In another bowl, whisk egg yolks, milk and butter. Stir into dry ingredients just until moistened. Stir in cheese.
    2. In a separate bowl, beat egg whites until stiff but not dry. Fold into batter. Drop 1 heaping tablespoon of batter in the center of each waffle iron quadrant; bake according to manufacturer’s directions until golden brown, about 5 minutes. Cool on wire rack. Repeat with remaining batter.
    3. Spread mayonnaise or ranch dressing evenly over half of the waffle pieces; top with bacon, tomatoes, lettuce, seasonings and remaining waffle pieces to make sliders. Serve immediately.
