This is my third year participating in GirlCarnivore's #BurgerMonth, and it has been my most challenging yet. Several wonderful ideas had to be scrapped due to my son's school going to remote learning, or the inability to get ingredients, but I'll be circling back to them in the upcoming years, for sure.
This epic burger is part of a fan-frickin-tastic month-long event hosted by Girl Carnivore, but opinions are always my own!
I had been having a hard time getting my hands on bread or rolls, but always seemed to be able to get flour tortillas. I originally set out to copycat a restaurant chain's version, but somewhere along the way it morphed into it's own thing, and I'm incredibly happy that it did.
I made the quesadillas first, using handfuls of cheese and some diced fresh jalapeno. I kept them warm in the oven while I cooked up the burgers. For the condiments, I decided on medium hot chunky salsa and some sour cream mixed with taco seasoning.
I put down a wedge of quesadilla, spread it with the sour cream mixture, topped with with a burger, added salsa, then repeated the layers.

Quesadilla Burger
Yield: 2
Ingredients
- 1/2 pound ground beef (I like 85%)
- 1 packet mild taco seasoning
- 2 flour tortillas
- 3/4 to 1 cup Mexican blend cheese
- 1 jalapeno, diced
- 1/4c sour cream
- 1/4c salsa
Instructions
- Combine 1t taco seasoning with sour cream and refrigerate.
- Heat griddle to medium high heat. Spray with non stick spray. Lay down tortilla, sprinkle with cheese and jalapeno. Top with remaining tortilla.
- Cook until golden brown on one side, flip and cook until other side is golden brown and the cheese is melted. Keep warm in oven.
- Combine ground beef and 2t taco seasoning. Form patties (I used a square burger press and then cut the burgers on a diagonal). Cook burgers over medium heat to desired level of doneness.
- To assemble: Place quesadilla wedge on plate. Top with a dollop of sour cream mixture. Add burger, then a spoonful of salsa. Repeat.
- Makes 2 servings.
