This is my third year participating in GirlCarnivore's #BurgerMonth, and it has been my most challenging yet. Several wonderful ideas had to be scrapped due to my son's school going to remote learning, or the inability to get ingredients, but I'll be circling back to them in the upcoming years, for sure. This epic burger is part of a fan-frickin-tastic month-long event hosted by Girl Carnivore , but opinions are always my own! I had been having a hard time getting my hands on bread or rolls, but always seemed to be able to get flour tortillas. I originally set out to copycat a restaurant chain's version, but somewhere along the way it morphed into it's own thing, and I'm incredibly happy that it did. I made the quesadillas first, using handfuls of cheese and some diced fresh jalapeno. I kept them warm in the oven while I cooked up the burgers. For the condiments, I decided on medium hot chunky salsa and some sour cream mixed with taco seasoning.
