Bananas Foster


Today is Fat Tuesday, which signifies the end of Mardi Gras.  It's called that because today is the last day to indulge in all the wonderful, sinful things before beginning Lent.  I participated in another event last week where we shared Mardi Gras recipes, and I mentioned that I just couldn't decide between a main dish and a decadent treat, so I'm sharing the second one today. 

I've heard of bananas foster before, but had never actually tried it.  I found this recipe on the Taste of Home site, and it comes together quickly and easily. Traditionally, the dish is finished with rum and then ignited to burn off the alcohol.  This recipe calls for extract, but you definitely can do it the other way if you chose.


You can serve this over ice cream, but since I made this early in the day, pancakes were definitely the most over the top way I could chose to enjoy it. I was pressed for time, so I used a mix, but you could make them from scratch if you're not a fan.  I made the pancakes first and then kept them warm in the oven while I made the bananas. Joyeux Mardi Gras! Laissez les bons temps rouler!

Ingredients

  • 1/4 cup butter -- cubed
  • 3/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 Dash ground cloves
  • 1/4 cup heavy whipping cream
  • 3 medium firm bananas -- halved lengthwise and cut into thirds
  • 1/4 teaspoon rum extract
  • Ice cream

Instructions

  1. In a large skillet, melt butter. Stir in the brown sugar, cinnamon, nutmeg and cloves. Cook and stir until sugar is dissolved.
  2. Stir in cream. Add bananas and extract. Serve warm with ice cream.
