Sheet pan dinners are all the rage right now. I love how easy they are to make, and also to clean up. It's also a great way to use up various veggies you have on hand As I trimmed brussels sprouts with my paring knife, I wondered, how would apples work as part of a sheet pan dinner?
I cubed up a large apple, peeled some carrots, and added them to the pan with the brussels sprouts. I considered turkey sausage for the protein, but then remembered that I had some boneless skinless chicken breast I'd defrosted and not cooked. I cubed that up and added to the pan too.
I sprinkled the apples with cinnamon. I drizzled olive oil over the chicken and veggies, then hit them with some kosher salt and fresh cracked black pepper. To finish, some dried thyme on the chicken and carrots. I popped the pan in the oven and cooked it for 25 minutes at 400 degrees. Your time will vary based on the veggies you use and the size they are cut.
Easy as ABC! Apples, brussels sprouts, carrots & chicken, of course! I served it over some a brown rice and quinoa mix. This version makes 2 servings, but it can easily be doubled or tripled. So delicious, and you can't beat the easy clean up!

ABC Sheet Pan Dinner
Ingredients
- 1 large apple, cored and cut into 1/2" chunks
- 12 Brussels sprouts, trimmed and halved
- 6 baby carrots, greens trimmed off
- 6 boneless, skinless chicken breast tenderloins, cut in bite sized chunks
- 1T olive oil
- 1/2t cinnamon
- 1/2t salt
- 1T pepper
- 1t dried thyme
Instructions
- Heat oven to 400 degrees.
- Place apple, vegetables and chicken on sheet pan. Drizzle with olive oil.
- Sprinkle apple with cinnamon. Season chicken and vegetables with salt and pepper.
- Sprinkle thyme over carrots and chicken.
- Bake for 25 minutes, or until vegetables are soft and the chicken is cooked through.
- Serves 2.
