Easy as ABC Sheet Pan Dinner- Apples, Brussels Sprouts and Chicken!

Sheet pan dinners are all the rage right now.  I love how easy they are to make, and also to clean up.  It's also a great way to use up various veggies you have on hand  As I trimmed brussels sprouts with my paring knife, I wondered, how would apples work as part of a sheet pan dinner?

This post is sponsored in conjunction with AppleWeek. I recieved product samples from sponsor companies to aid in the creation of AppleWeek recipes. All opinions are my own.

I cubed up a large apple, peeled some carrots, and added them to the pan with the brussels sprouts.  I considered turkey sausage for the protein, but then remembered that I had some boneless skinless chicken breast I'd defrosted and not cooked. I cubed that up and added to the pan too.

I sprinkled the apples with cinnamon.  I drizzled olive oil over the chicken and veggies, then hit them with some kosher salt and fresh cracked black pepper.  To finish, some dried thyme on the chicken and carrots. I popped the pan in the oven and cooked it for 25 minutes at 400 degrees.  Your time will vary based on the veggies you use and the size they are cut.

Easy as ABC! Apples, brussels sprouts, carrots & chicken, of course! I served it over some a brown rice and quinoa mix.  This version makes 2 servings, but it can easily be doubled or tripled.  So delicious, and you can't beat the easy clean up!

So many great recipes being shared this week, I hope you are enjoying them as much as I am! Don't forget to enter the giveaway for your chance to win a prize package from Swiss Diamond and the other amazing #AppleWeek Sponsors!  Info on the prize packs can be found here.
