Unfortunately, I couldn't find the currants, I substituted dried cranberries instead. I sprinkled the tops with raw sugar instead of regular, I just love the crunch it gives. I was hesitant about the caraway. I've had resistance in the past from my guys when I've made things with anise, which is a similar flavor profile. These were a huge hit with everyone. The caraway isn't overwhelming, and I love the texture of the muffins.
Thank you so much to Carlee for hosting, and to all the other Festive Foodies for sharing their #StPatricksDay recipes! I'm really looking forward to exploring more Irish foods now.

Until recently, I too have a hard time finding dried currants. Luckily for me, they seem to be popping up everywhere now! Guess that means it's time to make some soda bread muffins!!!
ReplyDeleteI've got to hit a few more stores, I really want to try them now!
DeleteI love these little muffins. I was able to find currants but it was a HUGE package. I have enough currants to last me 5 years LOL. I think the dried cranberries were a great substitution.
ReplyDeleteUsually after I find something in a big quantity like that, my guys decide they don't like it anymore lol
DeleteAdmittedly, I have yet to try Irish soda bread, but your recipe is easy enough for me to try. Looks so yummy too. Pinned
ReplyDeleteSo easy! I'm looking forward to trying the traditional version too :)
DeleteI think I like this much better than the actual bread, and they last longer! I do have some dried currants on hand too!
ReplyDeleteAnd they're portable! Great on the go breakfast or snack.
DeleteI love the idea of doing the bread as muffins! Plus that forces a bit of portion control ;-) They look delicious!
ReplyDeleteYes, easier for me to hide a few for myself this way, before the guys devour them all!
DeleteI love this as muffins! Craisins are a nice twist!
ReplyDeleteI've been eating them a lot lately, so it was the first substitution that jumped into my mind :)
DeleteLove that you added Craisins. I eat a lot of them too! A delicious looking muffin.
ReplyDeleteThey're one of my favorite snack add ons right now. With greek yogurt cream cheese on celery, in oatmeal, so good!
DeleteMmm, I love Irish soda bread and the idea of doing it as muffins is so smart! It sound delicious to this lass, who has Irish heritage as well! :)
ReplyDeleteMakes them great for on the go breakfasts or snacks!
DeleteI love the idea of Irish Soda muffins! I'm going to give this a try the next time I make soda bread which will be soon!
ReplyDeleteLove this recipe, and I love the fact that you used turbinado sugar for that crunchy top!
ReplyDeleteOh I have dried currant from my own garden. I hope they'll work!
ReplyDeleteSo jealous! My inlaws used to have one, but it didn't survive the harsh winters we've had :(
DeleteI totally love that these are muffins!! Thanks for sharing at Friday Frenzy Link Party! PINNED :)
ReplyDeleteThank you so much for stopping by! I've pinned so many recipes from the party, and I keep finding more every time I go back :)
