    Green Bean & Corn Medley


    Corn is one vegetable I know my family will eat without complaint.  Green beans are another, so when I found this dish combining the two, I immediately put it on the menu.   

    I've probably made it a half dozen times already, and it always disappears. Corn season is coming up soon, and I plan on using fresh and will adjust the cooking time.   If you aren't a fan of thyme, try basil or parsley.


    What do I need to make Green Bean & Corn Medley?

    Two packages of frozen green beans and one bag of frozen corn, defrosted, thyme, either fresh or dried, olive oil, salt, pepper and butter. 

    How do I make it? 

    All you do is saute the green beans and corn in the oil and butter until they are tender.  Sprinkle with thyme, salt and pepper and serve.

    What do I serve it with? 

    The great thing about this dish is that it goes great with simple meals like grilled chicken or burgers or you can put it out on your holiday table alongside ham or turkey!

    Ingredients

    • 3 cups frozen cut green beans, thawed
    • 10oz package frozen corn, thawed
    • 2 tablespoons butter
    • 1 teaspoon olive oil
    • 1 1/2 teaspoons dried thyme or 1 tablespoon fresh
    • 1/4 teaspoon salt
    • dash pepper

    Instructions

    1. In a large skillet, saute beans and corn in butter and oil until tender. Stir in the thyme, salt and pepper.
