    Easy Cannoli Cookies




    Cannoli purists, look away.  Today's recipe is Easy Cannoli Cookies from Crazy for Crust.  These cookies give you the taste of a cannoli while using simple ingredients.   I used a cookie cutter to make mine a bit more festive.  I also added a bit of green food coloring to the beaten egg. 

     
     
    I used half the mini chips in the filling and then dipped the edges in the other half.   You could substitute part of the vanilla for orange extract.    Thank you to Dorothy for sharing the recipe!


    Easy Cannoli Cookies

    Easy Cannoli Cookies

    Ingredients

    • 2 refrigerated pie crusts -- from a box
    • 1 egg (+green food coloring, if desired)
    • 1/4 cup turbinado sugar (sugar in the raw)
    • 2 tablespoons heavy whipping cream
    • 1 cup whole milk ricotta cheese (do not substitute low-fat)
    • 2/3 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1/2 cup mini chocolate chips

    Instructions

    1. Heat oven to 350. Line cookie sheets with parchment paper.
    2. Follow directions to unroll pie crusts and use a cookie or biscuit cutter to cut out shapes. Re-roll the scraps and repeat. Place on prepared sheets.
    3. Beat egg with food coloring and lightly brush onto each cookie. Sprinkle with turbinado sugar. Bake 10 to 11 minutes. Cool on sheets for 1 minute, then move to wire rack to cool completely.
    4. Beat the heavy cream to stiff peaks. Whisk together ricotta and powdered sugar. Add vanilla. Fold in whipped cream and 1/4c chocolate chips. Place filling into a pastry bag and pipe onto half of the cookies. Top with the remaining cookies. Put 1/4c of mini chocolate chips into a bowl and press the edges of the cookies into them, working your way around until the edges are covered.
    5. Store cookies in the fridge, and eat within a few days.

    1. Hi Jolene, these cookies look amazing! We love cannoli and I think these cookies would be a great addition to our Christmas Cookie repertoire. I was brought to your blog after searching for some information on Taste of Home and what happened to their online community forums. It seems they disappeared and all that is left is to follow them on pinterest, facebook, etc. A few of us are very disappointed in some of our posts that had shared recipes are no longer archived and now gone..do you know anything about TOH discontinuing forums? We didn't even see any announcement or email from them. Thanks!

      1. The Taste of Home forums did close, sadly. An announcement was pinned to the top of the boards about 5 weeks before the end date. There are a few groups on Facebook for Taste of Home. If you want to use the "contact me" option, I can send you the links.
