I have the best sister in the world, who always gifts
me with things she knows that I'd love but would never buy for myself.
This year it was an ice cream maker attachment for my KA mixer.
Yesterday was the last day of vacation and my son & I thought it would
be fun to make a couple batches
His request was Mint
chocolate chip. Since he has had problems with eggs in the past, I was
looking for an egg free recipe and I found it from the Neely's on the Food Network site. I used mint extract instead of peppermint. This is my favorite of the 2, nice texture for a no egg ice cream!
VERY minty, which could be from overenthusiastic measuring from the kid.
The second type I wanted to make was strawberry.
Picking time is coming and we've still got a good ration put away from
last year. I'll make jam soon, but in the meantime some ice cream
sounded great to me. This one came from allrecipes.com, Easy Eggless Strawberry Ice Cream.
Good, texture is a little more grainy but that could be because the
attachment hadn't totally refrozen yet. Next time I'd use sweetened
condensed milk instead of whole milk.
Mint chocolate chip ice cream
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups sweetened condensed milk -- chilled
2 cups heavy whipping cream -- chilled
1 1/2 teaspoons peppermint extract (used mint)
1/8 teaspoon green food coloring -had none, Jake mixed some with blue & yellow :)
1 cup mini morsel chocolate chips
Garnish:
Hot fudge sauce
Whipped cream
Shaved milk chocolate
Mix the milk, cream, peppermint extract and green food coloring together in a large liquid measuring cup and refrigerate until cold. Turn your ice cream machine on and pour in the cream mixture. Churn until the mixture looks slushy like soft serve, about 12 to 15 minutes. Stir in the chocolate morsels.
Transfer the ice cream to another container and put plastic wrap on top of the ice cream. Cover the container tightly with a lid. Freeze for several hours until firm enough to scoop.

Easy Eggless Strawberry Ice Cream
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups whole milk (next time use sweetened condensed?)
2 cups heavy cream
1 cup white sugar
1/4 teaspoon salt
2 teaspoons vanilla extract (used one t)
2 cups mashed fresh strawberries
2 drops red food coloring (optional)-- omitted-- juice from strawberries gave it great color
In a large bowl, combine the milk, cream, sugar, salt, vanilla, strawberries, and food coloring. Pour the mixture into the freezer bowl of an ice cream maker, and freeze according to manufacturer's directions.
